Whole Wheat Pancakes

We received our Wondermill Junior Deluxe hand grind grain mill.  Just like Christmas to me!   I bake much of our bread and I wanted a backup for our electric grinder.  Just in case we ever lose electricity I’ll still be able to grind wheat for bread each day.   I’ve been looking at hand grind mills for a while.  The Wondermill gets such great reviews it looked like the one for me.

We unpacked it and I am impressed.  Heavy duty parts look like they’ll last a while.  Time will tell!

I tried it out and found that in order to grind a lot of grain I’ll need help.  I have teen sons.  What are teen sons for.  🙂  I leave my grinder hooked to my kitchen counter and let my sons have at it.  In no time at all we had flour ready to go. And my boys get to flex their muscles.

Cool! First thing to try out with our hand ground grain is pancakes…. because we have pancakes many mornings.  I’ll play with other recipes later, for now I want to get some of our basics done.  It turned out great.

Whole Wheat Pancake Recipe

  • 1 egg
  • 1 cup flour
  • 1 cup milk
  • 2 T oil
  • 1 T sugar
  • 3 tsp Baking Powder
  • 1/2 tsp salt

Mixing and Cooking Directions

First thing you need to do is get your griddle heating. Turn flame on a medium setting. I use a cast iron skillet. Love love love cast iron.

Add egg to a mixing bowl. Beat egg lightly.

Add all the other ingredients and blend with a wire whisk. (7 yr old boys make great pancake mixers!)

Let rest for 3 minutes. The whole wheat flour will tend to thicken when it sets for a while. This is why I give it a rest for a few minutes.

Check your batter thickness and add milk as needed. I’ll usually add 1/2 cup of milk or so. We like our pancakes on the thin side. If you like them thicker… leave your batter thicker.

Test your skillet to see if it is hot enough. Drop a tiny bit of water on the hot surface. Just a drop or two. When the droplets skitter across your skillet it is hot.whole-wheat-pancake-recipe-2

Pour your pancake batter on the skillet. I use about 1/3 cup. This will depend on how big you like your pancakes.

When the edges are looking a bit dry and you have bubbles over the top check the underneath. If it is nicely golden, turn to the other side. Cook until lightly browned.

Serve with hot maple syrup. Or homemade jam. For my meat eaters, bacon or breakfast sausage is a must as well.
