Whole Wheat Buttermilk Shortcakes

Our kids have been on a strawberry kick lately.  We will never say no to that!  Shortcakes are a natural way to use strawberries as a sweet treat, but we are always looking to make those treats just a little healthier.  Adding whole wheat makes these a little healthier and adds a little bit of a nuttier flavor.  You can top with just plain strawberries or add a little sugar to sweeten things up a bit.  Of course, a little homemade whipped cream just gilds the lily a bit.  As you can see from the pictures below, the girls ate them all up.  I don’t think we could ask for any more proof of success!

Whole Wheat Buttermilk Shortcakes

Ingredients

2 cups whole wheat flour
3/4 cup sugar
1 tbsp baking powder
1/4 tsp salt
1/3 cup butter, chilled and cut into pieces
3/4 cup buttermilk

Directions

Preheat oven to 400.

Combine flour, sugar, baking powder, salt, and butter in a food processor.  Pulse a few times until it resembles coarse sand.  Add buttermilk and pulse until the dough comes together.  If the the dough is dry, add more buttermilk one tablespoon at a time until the dough is moist, but not wet.

Drop 1/4 of dough onto a parchment-lined baking sheet.  Repeat until all dough is gone.  Bake at 400 for approximately 15 minutes until golden.  Let cool for 3-5 minutes on the pan.

Cool completely on  wire rack.  To serve, slice in half and top with sliced strawberries and whipped cream!

We found the Grain Mill Wagon Challenge to be a great challenge. We were able to taste the difference in fresh ground flour versus what we bought at the store. The challenge allowed us to strive to make healthier versions of some of our favorite recipes and foods!
