If you are like us, when you make breakfast, you usually make too much. We always seem to have leftovers, especially of waffles.
The thing about real waffles is, in my opinion, they do not taste great reheated. They always seem a bit too soggy. But, these waffles made with freshly milled flour from my new wondermill, were too great to let go to waste.
Well, one day, inspiration struck, and I knew what to do with those waffles sitting in the refrigerator. Waffle Tostadas! I had been using my panini grill for everything, so why not use it for your waffles as well.
I often use a boxed batter for waffles, but since I got my wondermill, that is in the past. So today I want to share with you a recipe I adapted from a recipe on All Recipes to fit my healthy needs.
Waffle Tostada Dessert

Serves: 6
- 2¼ Cups Freshly Milled Oat Flour
- 4 tsp Baking Soda
- 2 TBSP Sugar Substitute
- 1 tsp Cinnamon
- ½ Cup Egg Beaters
- 1½ Cup Vanilla Soy Milk
- ⅓ Cup Light Vegan Butter
- 1 tsp Vanilla
- Topping Suggestions:
- Fruit
- Sugar Free Caramel Sauce
- Fat Free Whip Cream
- Mix dry ingrediants into one bowl
- In another bowl, wisk together eggs, milk, butter and vanilla
- Slowly fold wet ingredients into dry mix, just until blended.
- Pour into your hot waffle iron until cooked through
- Tostadas:
- You can make the tostadas right away or make these from leftovers.
- Place cooked waffle in a panini press until crispy.
- Top with fruit, sugar free caramel sauce or fat free whip cream.
