The holidays are coming and that makes me think of pumpkin, cranberries and gingerbread.
Particularly gingerbread. I LOVE a good piece of gingerbread cake. Since I have changed my diet, I had not attempted yet to make many cakes. But I knew this was my chance using my new Wondermill Electric Grain Mill.
I decided to use whole wheat flour made from red wheat berries. It has such a rich taste which I felt would blend nicely with the flavors of molasses and ginger.
The result was fantastic. You won’t believe you are eating a way healthier vegan version of a classic! (This recipe was adapted from a Kroger Stores Flyer)

About busyvegetarianmom
My name is Tracy and I am a new-ish Busy Vegetarian Mom. After my husband at a very young age had 3 stents placed due to peripheral arterial sclerosis, we became proactive in our health and took a great course (CHIP) on how to reduce your cholesterol and improve your overall health. The class was geared toward eating a Vegan diet. I started my blog as a way to record answers to my questions and my favorite recipes along our journey to becoming healthy vegetarians. Most of my recipes are Vegan, all are Vegetarian. It quickly turned into a passion and I can't imagine my life without blogging and sharing the things I learn with others. I like to think that maybe I am making a difference and helping others on the path to health as well. Not only have we expanded our palate and enjoy so many wonderful meals we never would have tried, we have met so many wonderful people along the way and learned new things about our area in our search for healthy "eating out" options. It truly has been a life changing experience. I started a secondary blog as a result to connect with other food bloggers. It is one of those "Foodie Friends" who connected me with this opportunity to try the "WonderMill Electric Grain Mill" and I am so excited!

Grain Mill Wagon Challenge Experience: I'd like to thank Wondermill for the opportunity to participate in the Grain Mill Wagon Challenge. I had never thought of milling my own flour before this. I was very eager to try it and I am so glad I did. Not only do I get fresh flour milled instantly and easily to the consistency I need, it saves me money as well. I am able to buy organic grains in bulk and mill as needed. All of my recipes that I used my freshly milled flour in tasted so wonderful. I highly recommend the Electric Grain Mill for anyone who bakes. Thank you!
