Soft Spice cookies ~ a Christmas Treat

Forget the Holiday themed room sprays, if you want your house to smell like spicy goodness, bake these lovely soft, spicy pillows of goodness! These cookies are a cross between a gingersnap and a lofthouse cookie. (those really Super soft cookies you find in the grocer’s bakery section, you know, the ones you CANT resist? yeah, those!)  photo IMG_1412_zps26ba2dc0.jpg First thing’s first a great cookie results from the two rules, wet wet+dry dry. Ok what on earth does that mean? Lemme ‘Splain..

You always mix your wet ingredients (sugar is a wet, yes really) and your dry ingredients then you mix them both. photo IMG_1396_zps7088fbf9.jpg  Now for the cast of Characters: in the wet corner, Butter, sugar molasses, (and eggs, later) in the dry corner, flour, spices, salt, baking soda and baking powder.  And Now, we cream all of the wet ingredients… Granted, yes that doesn’t look very creamy but this is kind of a different cookie. Trust me, Dahhling! Keep calm and mix on… once you have them as creamed as possible, no need to beat it til it’s fluffy, just until incorporated.  photo IMG_1399_zps639ed2f9.jpgThen mix your dry ingredients. and now for the interesting part. You mix your dry into the wet and use the biscuit method. Biscuit method for a cookie? yep! mix in until it looks like  photo IMG_1400_zpsa5ad0c7b.jpgBrown sugar.  photo IMG_1403_zps0012e988.jpgSee? you’re probably wondering how on earth this is going to make anything resembling a cookie, but patience, my precious, we still have yet to add (dramatic magician pose) THE EGGS!!

Egg Numero Uno and Dos. Now Mix, at this point I used the wooden spoon for a minute, then gave up and used my hand. Best tools ever! This doesn’t take much mixing after this, it pretty much comes together very easily. I made a cookie dough mountain and swirled the bowl around to make the dough ball roll around, picking up the excess dough on the edges. Neat trick huh? ok, back to it! 🙂

I used a TBLSP cookie scoop to make uniform cookie balls on a lightly greased stoneware pizza pan. I love this pan, BTW, it’s seasoned and well loved! photo IMG_1408_zps49e520e2.jpgand used a wet spoon to flatten the dough balls slightly.

I baked them in the morning so the kiddos put sausage patties and cheese on them and made little breakfast sandwiches. I admit, it was different but OHH so good! the sweet and the savoury and the creamy cheese made such a delicious combination! photo IMG_1416_zps81f18ceb.jpg

Soft Spice cookies ~ a Christmas Treat

A Soft pillowy cookie that is a cross between a gingersnap and a lofthouse
Ingredients
  • 1 c whole wheat flour
  • 1¾ c ap flour
  • 2 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp ginger
  • 1 tblsp cinnamon
  • ½ tsp cloves
  • 1 tsp allspice
  • ½ tsp salt
  • 1 c sugar
  • ¼ c dark molasses (unsulphured)
  • ¾ c butter no substitutions or texture will change
  • 2 large eggs
Instructions
  1. Instructions:
  2. Preheat oven to 375
  3. Cream all wet ingredients except eggs, combine all dry, then add dry mixture to wet and combine until mixture resembles brown sugar. Then add eggs at same time and combine until dough just forms. dough will be sticky. Drop onto lightly greased cookie sheet in tblsp fulls and use a large flat spoon, dipped in water to flatten slightly.
  4. Bake 8-10 minutes and allow to cool 5 minutes then remove to cooling rack.
  5. Enjoy!
  6. they are great with calamondin orange jam, marmalade, and even chocolate!
