Skillet Pizza

Who doesn’t love pizza?  There’s nothing like homemade pizza with healthier ingredients from scratch!

My favorite way to make pizza is in my cast iron skillets!  I have 2 skillets that are perfect for this recipe:  a 10-inch and a 12-inch.  I evenly divide the dough between the 2 skillets and both skillets fit well in the oven together.

Ingredients:

1 cup freshly milled whole wheat flour
1 1/2 cups unbleached white flour
1 tbsp. yeast
1 tbsp. raw sugar
1/2 tsp. salt
2 tbsp. coconut oil or butter
1 cup hot water

  • Mix together the flour, yeast, sugar and salt.
  • Add water and oil and mix well.
  • Knead for 5 minutes, adding more flour if the dough is too sticky.
  • Let the dough rest for 5 minutes.
  • Divide dough into two separate balls.
  • Roll out the balls of dough onto a floured surface into a circle shape to fit your skillet.
  • Grease the sides and bottom of the skillets to keep the dough from sticking.
  • Place the dough into the skillet and press into the bottom and sides of the skillet.
  • Poke holes in the dough with a fork.
  • Bake at 400° for 10 minutes or until the crust is lightly browned.

Now it’s time to assemble your pizza!

My girls like their pizza with only cheese, but I believe that is boring. 🙂  I made one pizza with just cheese for them, but I chopped up green pepper, onion and broccoli for the other pizza.  I typically use either mozzarella or mostly mozzarella with a little cheddar.  This last time I was out of mozzarella cheese, and we really liked it with cheddar alone; both ways are delicious!

  • If you use vegetables, lightly saute them before putting them on the pizza.
  • Place sauce on baked dough
  • Place cheese on sauce
  • Putting toppings on cheese
  • Put more cheese on the toppings.  I love cheesy pizza!
  • Bake pizza 10 more minutes until cheese is melted and sauce starts to bubble.

*I would also like to say that I have greatly enjoyed this Grain Mill Challenge! There is such a difference between store-bought flour and freshly-milled flour in the nutrition, taste and texture.  I have really had fun making my recipes with my own flour thanks to the awesome Wonder Mill!

Grain Mill Wagon Experience: For years I have desired to make my own flour, and have heard from several others that they preferred the WonderMill as their favorite. I was thrilled to participate in this challenge and discover for myself how simple the WonderMill is to use, clean and store. I am still amazed every time I see wheat berries or oat groats turn into beautiful flour in a matter of seconds! Through this challenge I have discovered that making my own flour saves money and is more nutritious for my family. I appreciate this opportunity and will be recommending the WonderMill for years to come.
