Who doesn’t love fresh pancakes? Pancakes are a common breakfast request in our home. Since getting our new Wonder Mill grain mill I have fallen in love with using fresh flours, especially oat flour!
Today while I was making pancakes, the kids rushed in and asked when the sugar cookies would be ready! “Sugar cookies for breakfast? You know me better than that.” I replied but that is what they smelled like while they were being made.
This is a super easy way to make pancakes from scratch, so you will not have a need for a mix again!

Simple from Scratch Oat Flour Pancakes
Ingredients
- 1 ½ Cups of Flour (I use ground oat flour!)
- 1 Tablespoon of Baking Powder
- 1 ½ Tablespoon of Sucanat or Sugar
- 1/2 Teaspoon of Salt
- 1 Egg
- 1 Cup of Milk or Buttermilk
- 1 Teaspoon of vanilla
- 1/4 Cup of Melted Butter or Coconut Oil
Directions
Mix your dry ingredients first. Add your wet ingredients and stir to combine. The batter will still be slightly lumpy.
Over medium heat, warm your skillet or griddle. I add about a teaspoon of coconut oil to coat the pan when I begin.
After it has warmed for about 3 minutes, pour about a quarter of a cup of batter into the skillet. Once the edges have begun to bubble all the way around the pancake, use a spatula to flip.
Continue to cook until browned, about 2 minutes. Repeat until all pancakes have been made.
Makes approximately 10-12 pancakes, depending on size.
I cover my stack of pancakes with a towel to keep them warm as they are coming off the skillet.
