Rustic Wheat Berry Bread

I love to bake bread, but since time is usually at a premium, I admit I ‘cheat’ and use my bread machine. So when WonderMill contacted me to ask if I would be willing to try a few recipes grinding my own grains, I was hesitant. I mean, if I don’t have time to hand knead bread, I hardly have time to start grinding grain right? Wrong!

The WonderMill is so easy to use and so fast, it literally takes no time to grind whole grains (which of course make homebaked bread so much fresher and more tasty!)

This dense rustic bread calls for wheat berries. It was my first time working with wheat berries so I wasn’t sure what to expect but my loaf came out perfect – and grinding the wheat berries in my WonderMill couldn’t have been easier.

I measured out about two cups of wheat berries and poured them slowly into the mill.  In seconds I had a canister full of freshly ground flour!

Rustic Wheat Berry Bread

1 Cup plus 2 Tablespoons warm water

1.5 Tablespoons vegetable oil

1.5 Tablespoons sugar

1.5 teaspoons salt

3.5 Cups ground wheat berries

2 teaspoons active dry yeast

Add all ingredients to your bread machine in the order listed and then select the French Course.  Serve warm with homemade butter and a steaming bowl of soup, chili or chowder.
