I used to not care for coconut too much, but I’ve come to my senses in the past few years and now love it! These raw coconut balls are a fast fix for my sweet tooth, and they contain easy, healthy ingredients!
The coconut tree is very valued in some parts of world for it’s health benefits. Coconut fights disease, adds needed fiber to your diet and is good for your skin.
It’s important to use good quality coconut flakes. Bags of coconut flakes bought in the average store has ingredients added that make it quite unhealthy! Like in the bag below, sugar and other not-so-good-for-you ingredients are added in many bags of coconut.
The best kind of coconut is unsweetened and contains nothing else except pure coconut! I love the texture and taste of pure coconut flakes!
Grind the flour of your choice. I ground oats to make oat flour for this recipe.
Stir the first 6 ingredients together and roll into balls.
Rolls the balls in melted chocolate and coconut flakes.
Below is the full recipe!
1 cup freshly ground flour {I used oats}
1 cup unsweetened coconut flakes
3 T. raw honey
1 T. water
1 tsp. cinnamon
1/2 tsp. vanilla
Melted dark chocolate
Stir together flour, coconut, honey, water, cinnamon, and vanilla. Roll dough into balls. Roll coconut balls in melted chocolate and then in additional coconut.
One thing I discovered when making these is that it’s important to use up all the dough right away. Otherwise, the chocolate begins to harden and the dough becomes crumbly. It’s still yummy to eat, crumbly or not! 😉
Enjoy! 🙂
