Quick & Easy Whole Wheat Baking Mix

If you’re like me, you love short cuts. With a growing family, cooking from scratch can be time consuming but worth it, not only for the health benefits but also from a money saving perspective. Sometimes, though, it’s nice to have a mix on hand where it doesn’t take you 30 minutes and 12 ingredients to make something like pancakes for breakfast.

Over a year ago, our family decided it was past time to start making better and healthier choices in food. I wanted to get away from white flour and white sugar for starters. That meant we had to start eliminating a lot pre-made/processed products. Those quick baking mixes being one of them. 🙂

I started doing some research and discovered that making your own baking mix was  going to be super easy and use ingredients I already had on hand.

Quick & Easy Whole Wheat Baking Mix
 
 
Ingredients
  • 10 cups Whole Wheat Flour
  • 8 tablespoon Baking Powder
  • 1-1/4 cup Powdered Milk (I like powdered buttermilk and use that but reg. non-fat powdered milk works just fine too)
  • 1 tablespoon Sea Salt
  • 1 teaspoon Cream of Tartar
  • ¼ cup Raw Sugar/Turbinado
  • 2-1/4 cup cold Coconut Oil (or shortening - I had to use shortening this time as I didn't have enough coconut oil and it works just fine if that's what you have on hand)
Instructions
  1. Mill your flour first.
  2. Mix all your dry ingredients together in a large bowl.
  3. Cut in oil or shortening with either two knives or a pastry cutter, until mixture crumbles.
  4. Store in an air tight container and keep in a cool place like the freezer.

If you want to make pancakes, follow the recipe below (and yes, this is just following the basic Bisquick recipe):

2 c. homemade baking mix
2 eggs
1 c. milk

Mix all ingredients together in a medium bowl until well blended. Heat your pan or griddle and lightly grease. Pour your batter to the size of pancakes you want. Cook until the edges are dry. Flip and cook until done.

I was thrilled to be a part of the Grain Mill Wagon Challenge. Our family has been making the effort to eat healthier for the last year and a half by switching to more whole grains/whole foods and doing away with the processed/refined foods. Being a part of the Grain Mill Wagon Challenge allowed us to just further that effort by giving us the option to mill our own flours and learn more about incorporating whole wheat and other flours into our diet.

While milling our own flour is an extra step, the WonderMill has made it so easy and quick that it isn't an inconvenience and our whole family has enjoyed the benefits of fresh milled flour. Being a part of the Grain Mill Wagon Challenge has encouraged me to find more ways to incorporate whole grains into our diet as well as find family favorite recipes.
