Lentil Crackers - Gluten Free

Recipe type: Cracker
- 2½ Cups Lentil Flour
- ⅓ Cup solid fat (butter, Coconut butter, Palm oil)
- ⅓ Cup plus ¼ Cup water
- ¼ Cup seed (flax, sesame...)
- ¼ Cup Onion flakes
- 2 Tablespoons Onion Powder
- ½ teaspoon salt
- ¼ Cup Garlic powder
- Combine ingredients to make a dough
- Using a rolling pin, shape the dough on parchment paper into a thin cracker layer
- Slice the flat dough into desired cracker shape and size
- Sprinkle with the seed (Flax, sesame...) and press into dough with rolling pin
- Bake at 350 degrees F until golden brown and crisp. My oven took 20 minutes
- Remove and cool on a rack.

Lentils are a very healthy protein source with zero (yes ZERO) cholesterol.
This cracker recipe is a gluten free, sure. But even those of us who don’t suffer from a gluten intolerance could stand with a little variety in our diet.

I have a better sense of how blessed I am to live in the modern world but also a lot of respect for those historical relatives who had to do so much more to put good food on the table. And, though I am blessed to live in a modern world, I also see the dangers of leaning too much on 'convenience' over quality.
