This breadstick recipe has been a family favorite at my house for a long time. It was given to me by my Mother-in-Law when I got married 12 years ago and it gets used on a regular basis. I was excited to try it out using my fabulous new WonderMill!
The first time I tried these breadsticks with the freshly milled whole wheat bread flour, I used all 4 cups of the whole wheat flour. The second time I made them, I used 2 cups whole wheat bread flour and used regular white bread flour for the rest. The breadsticks are great either way. My personal preference is the way I made them the second time by mixing the two flours. I like how the combination gives the bread a softer fluffier texture but still has the whole wheat goodness.
Honey Wheat Breadsticks
- 1 ½ cup warm water (90-110˚ F)
- 1 Tbsp honey
- 1 Tbsp active dry yeast
- 1 tsp kosher salt
- 3-4 cups flour
- ¼ cup butter
Can I just say that I love my WonderMill! It is so easy to use. Just turn on the mill, fill the hopper with the wheat berries and watch them disappear quickly into fabulous whole grain flour collected in your holding canister.
This mill is more quiet than I expected it to be and incredibly fast. If you’ve ever used a hand crank mill you will jump for joy for this one. I love making healthy bread that my family loves to eat, and I love that making my own flour can be done in less than 5 minutes. It takes me longer to get it out of the box and measure out my grain than it does to process. Amazing!
In a large bowl or in the bowl of an electric mixer fitted with a dough hook, mix the yeast, water, and honey until the yeast is mostly dissolved and starting to bubble.
Add 2 cups of flour and the salt, then mix well.
Scrape down the sides of the bowl. Add another cup of flour and mix well.
Add the remaining flour a little at a time kneading for 3-5 minutes until the dough starts to pull off the hook.
Grease a large bowl with butter or shortening. Transfer the dough to the prepared bowl, turning once to coat.
Cover with a towel and raise for about 45 minutes or until the dough has doubled in bulk.
Generously flour a work surface. Roll out the dough to about ¼” thickness.
Use a pizza cutter to slice the dough into 1” strips.
Fold each strip in half, twist, and place on a baking sheet that’s been greased or lined with parchment paper. Turn the oven on to 375˚ F. Cover with a clean towel and raise about 30-45 minutes.
When they have doubled in size, melt the ¼ cup of butter and use a pastry brush to coat the tops of the breadsticks. Bake in the preheated oven for 15-20 minutes until the tops are golden brown.
*For a different twist: use olive oil instead of butter and top with garlic and Italian seasoning or sprinkle with Parmesan cheese right before baking. Or for a fun treat, generously sprinkle cinnamon sugar over the top of the breadsticks after you brushed them with butter.
