We are still new to the concept of milling our own flour, but we have been experimenting with all kinds of new recipes and new flours!
Today’s flour of the day – rice flour!
We decided to make a rice flour dough to go with our homemade pizza.
I didn’t realize rice flour was as easy as it was – white rice into the grainmill and away we go. Rice flour.
The recipe we used calls for:
1 (0.25 ounce) package of active dry yeast (0.25 ounces of yeast is equivalent to 2 and 1/4 teaspoons, in case you didn’t have packages on hand, but bulk)
1 teaspoon white sugar
1 cup warm water, approximately 110 degrees Fahrenheit
2 1/2 cups rice flour
2 tablespoons olive oil
1 teaspoon salt
Pizza sauce
Pizza toppings
Pizza cheese
You are going to want to preheat the oven to 450 degrees Fahrenheit.
If you have a mixer, you can use a mixer otherwise you can use a medium sized bowl.
Dissolve the yeast and the sugar in the warm water. Let it stand until creamy or approximately 10 minutes.
Stir in the flour, salt and olive oil. Beat until smooth (if you are using a stand mixer I would use your dough hook or if you do not have a mixer, I would recommend a strong wooden spoon).
Let rest for 5 minutes.
Turn dough out onto a lightly floured surface and pat or roll into a round.
Transfer the dough to a lightly greased pizza pan.
At this time, spread you sauce and desired pizza toppings onto the with desired toppings (we used pepperoni, mozzeralla and colby jack cheese).
Bake in preheated oven for 15 to 20 minutes, or until golden brown.
Let cool for approximately 5 minutes before serving.
