Sometimes you just NEED a soft, delicious Chocolate Chip Cookie. This Gluten Free Chocolate Chip Cookie Recipe is perfect for those cravings! But this cookie is made without all purpose or wheat flour.
I decided to dip my toe into the Grain Mill pond and start with a cookie recipe that utilizes fresh milled oat flour.
This was my first time using my WonderMill and it was so much easier than I anticipated. I’m not sure why I thought it would be complicated because it wasn’t difficult at all. And in full disclosure, the first time I turned it on I jumped back and covered my face like I was disabling a bomb! {Yes, I am a HUGE dork and No, I do not use power tools either}
I’m happy to report that I have used my WonderMill many times and made a variety of flours without causing any bodily harm. Success!
I have previously made a gluten free cookie with rolled oats in place of flour. So, I decided to give that recipe a try with fresh milled oat flour instead of rolled oats. It worked great! In fact these cookies are so much better than the rolled oat cookies that I have made in the past.
The consistency is smooth and soft. I do use peanut butter as a binder, so there is a slight peanut buttery taste. But it is not overpowering. In the future I think I will try using almond butter instead of peanut butter and see if that maybe works better.
I milled Steel Cut Oats to make my oat flour. Also, double check that the other ingredients/brands that you choose {peanut butter, chocolate chips, baking powder} are gluten free.
- 4 Tb Butter {room temp}
- ¼ Cup White Sugar
- ¼ Cup Brown Sugar
- 1 Egg
- 1 tsp Vanilla Paste or Extract
- 1 tsp Baking Powder
- ¼ tsp Salt
- ½ Cup Creamy Peanut Butter
- ¾ Cup Fresh Milled Oat Flour {steel cut oats}
- ⅓ Cup Mini Chocolate Chips
- Preheat oven to 350°
- Using hand mixer, cream the butter, white sugar and brown sugar.
- Add the egg and vanilla. Mix for 5 seconds.
- Add the baking powder and salt. Mix for 5 seconds.
- Add the peanut butter. Mix.
- Add the oat flour. Mix just until all ingredients are incorporated.
- Stir in the chocolate chips.
- Transfer bowl to refrigerator and chill for 15-30 minutes.
- Drop batter by the spoonful onto a greased cookie sheet.
- Bake for 10-12 minutes or until edges are golden brown.
- Let cool and Enjoy!
