Easy Cheddar Biscuits

These cheesy biscuits are a family favorite! They go with just about any dish, and are as quick to whip up as a boxed mix, but with much healthier ingredients! I’ve made them for years, tweaking the recipe a few times along the way, and adapting it for soaking when we got serious about reducing our grains and sticking to soaked and sourdough grains. I shared the original recipe on my blog several years ago, but here’s my most up-to-date version.

Easy Cheddar Biscuits

Serves: Makes 1 dozen
 
Ingredients
  • 2 cups flour (I prefer freshly milled spelt or hard white wheat)
  • 1 tbsp baking powder
  • 1 tsp Real Salt
  • ¼ cup coconut oil
  • 1 cup milk or thinned yogurt
  • 1-1.5 cups grated sharp cheddar (or other cheese of your choice)
  • 1 tsp garlic powder
  • 1 Tbsp parsley
Instructions
  1. Mix milk or yogurt with coconut oil.
  2. Combine with flour, mixing just until flour is wet. Cover and leave overnight or for 8-12 hours.
  3. Preheat oven to 425.
  4. Add baking powder, salt, spices, and cheese, mixing just until combined well.
  5. Use a cookie scoop or spoon to drop rounded mounds of biscuit dough on a greased cookie sheet or baking stone.
  6. Bake at 425 for 10 minutes.
  7. If you don't have time to let the flour soak, you can use these alternate instructions: Mix together all dry ingredients, make a “well” in the middle. Combine oil and milk, pour into well and mix, just until blended. Add cheese and mix. Follow directions above to complete.

 

 

Wondermill with speltRemember that the secret to tender biscuits is not to over mix them! You want the ingredients to just be blended. The less mixing, the more tender they’ll be!
