Creamy Quinoa Pudding

This Creamy Quinoa Pudding is a great alternative to the store bought pudding in a box.  Made all natural with quinoa flour, coconut milk, honey and pomegranate seeds.  This bowl of pudding will leave you satisfied and guilt-free!

Creamy Quinoa Pudding Recipe

I wanted one of my Grain Mill Wagon recipes to not be a baked good.  So, I decided to create a pudding dish.

My first try was a corn pudding.  Let’s just say that recipe still needs a little work.  I moved on and decided to create a Quinoa Pudding Recipe.

I milled my {pre-washed} quinoa and got to work.  The result is this tasty quinoa pudding.  It is the consistency of tapioca pudding without the pearls.  Sort of between a pudding and a porridge.  Disclaimer: You must love the taste of quinoa to enjoy this recipe because the flavor is concentrated.

Creamy Quinoa Pudding Recipe

This recipe has many variations.  Use coconut milk, almond milk or regular milk.  Sweeten the pudding with your preferred sweetener.  I like honey or maple syrup.  And, of course, use any fruit or nuts that you enjoy.

Creamy Quinoa Pudding

Ingredients
  • 1 Cup Plain Coconut Milk
  • ¼ Cup Fresh Milled Quinoa Flour {use pre washed quinoa}
  • ⅛ tsp Salt
  • 1 Tb Honey {or more to taste}
  • 1 tsp Vanilla Paste or Extract {optional}
  • Pomegranate Seeds {or preferred fresh fruit}
Instructions
  1. In a small pot over medium/low heat:
  2. Whisk together the coconut milk and quinoa flour until fully incorporated.
  3. Continue to heat while stirring frequently until mixture begins to thicken and bubble. {about 10-12 minutes}
  4. Remove from heat and whisk in the salt, honey and vanilla.
  5. Serve warm or cold. {I preferred cold}
  6. Top with a splash of coconut milk, drizzle of honey and your choice of fresh fruit or nuts.
