Country Fried Cubed Steaks

Recipe:

(all measurements are approximate)

1 cup freshly milled flour
1 tsp steak seasoning
1 tsp Celtic sea salt
1/3 tsp onion powder
2 eggs, wisked
Bacon grease, for cooking in

In a bowl combine all dry ingredients.  In a separate bowl whisk the two eggs.  Dip the cubed steaks into the egg then into flour mixture and allow to sit for 10 to 15 minutes, then repeat.

Heat oil on medium and cook breaded steaks for 5 minutes on each side.

For gravy:

After the steaks are cooked then you should have a small layer of bacon grease left in the pan.  Sprinkle in about a 1/4 of flour to the pan and whisk until smooth.  Once blended then add 1 cup of milk and 1/4 cup of water.  Whisk continuously until smooth and thickened.

This came at a time when we were just learning about stocking up a long-term food pantry and buying bulk wheat berries ties right in with that. I've barely made a dint in our store of wheat so far and have made so many wonderful things so far. I look forward to all the recipes I will make in the future as well. My sourdough starters have never been this active before using fresh milled flour. My sweetie swears those were the best pancakes he's ever had!!
