My kids LOVE muffins, especially blueberry muffins. I had some fresh blueberries last week and just had to make them with whole wheat and oat flour. They were really good, and the only problem is, I made over 2 dozen of them and they were gone as fast as they came out of the oven!
I started out by grinding Oat Flour and Wheat flour in my amazing Wondermill. (This recipe also calls for Ground Flax…..DO NOT GRIND THE FLAX IN THE MILL)
Mix Together

1 cup Oat Flour

1 cup Wheat Flour

1/2 tsp Cinnamon

1 tsp Baking Powder

1/2 tsp Baking Soda

1/4 tsp Salt

1 T Ground Flax seed
Then in another bowl mix together wet ingredients.

1/2 C milk

1/4 C Unsweetened Applesauce

1/4 C Agave (I added a little bit more)

1 tsp Vanilla
-
3 T water
Mix in Dry Ingredients and then add 1/2 to 1 cup of Blueberries ( depending on how blueberry”ish” you want it).
Bake in Mini Muffins tins at 400 degrees for 20 minutes. You can do regular muffin tins, just add a litle more time.
These were delicious and my kids LOVED them! Hope you enjoy them also!
