Most people are familiar with waffles. They’re delicious topped with fresh berries, jam, jellies, syrups, and I enjoy mine with applesauce. But be ready to be wowed by these waffles. They’re not your regular waffle.
My co-workers son owns a waffle truck and she told me how delicious they were. Beings he wasn’t bringing the truck up to where we live anytime soon, she shared a similar recipe with me. (His recipe is a commercial size proportion)
I adapted this recipe from King Author’s Belgian Yeast Waffle Recipe. These waffles remind of a funnel cake, except they’re healthy.
Belgian Overnight Blueberry Waffles
- 1 1/2 cups lukewarm milk
- 3 tablespoons melted butter
- 3 tablespoons soft coconut oil
- 2 to 3 tablespoons honey
- 3/4 teaspoon salt
- 1 teaspoon vanilla
- 2 large eggs
- 2 cups soft white flour or all-purpose
- 1/4 teaspoon cinnamon
- 1 1/2 teaspoons yeast
- 1 cup fresh or frozen blueberries
Mix milk, yeast, and honey in a glass, wooden, or plastic bowl. Never place yeast bread in a metal bowl, it doesn’t retain heat and won’t rise properly. New to yeast breads, check out 8 tips for perfect homemade bread.
Add in all ingredients, except blueberries, and mix well. Cover with a tea towel and put in a warm draft free area for 1 hour. It should double in size and be bubbly. Refrigerate overnight or cook waffles in waffle maker. Right before cooking, add blueberries and stir into batter.
Makes 10 regular size waffles.
