This Santa has his eye on a chocolaty drink but all that milk and cookies gave him a tummy ache! Lactose problem, you see. But Santa can slurp this warm milky treat, no worries.
That’s because its made with soy milk.
Now I hear you saying, “What does soy milk have to do with a WonderMill?”
Did you know that pure soy milk is made with soy flour and water? Very simple to do.
Here’s how:
- Ingredients
- 1 cup soy flour
- 3 cups water
Line a colander with cheese cloth, set aside.
Bring soy flour and water together to a boil. Reduce heat and simmer about 20 minutes, stirring frequently until mixture becomes milky in color and texture.
Strain through the cheesecloth.
See the flour left behind.
I run it through a double mesh strainer to catch the last of the flour bits.
Now that you have the soy milk, you can refrigerate it and use it as you would purchased unsweetened soy milk from coffee, cereal, etc. Better yet, you can make that mocha drink Santa longs for…..
- Ingredients
- 1 cup unsweetened soy milk
- 2 Tablespoon powdered sugar
- 3/4 teaspoon cocoa
- 1/2 teaspoon instant coffee
- Whipped topping (optional)
- chocolate shavings (optional)
Combine soy milk, sugar, cocoa and coffee in a 1-quart saucepan. Heat over medium heat to 160 degrees, stirring constantly to dissolve coffee and sugar.
Pour into a tall mug and garnish with whipped topping and chocolate shavings.
Make an extra one for Santa and don’t forget the cookies!!
