I experimented with our regular pancake recipe and replaced all of the whole-wheat flour with spelt. They turned out wonderful and are the new favorite in our home. Even Daddy can eat them (he’s on a wheat-free diet)! This recipe is easy to memorize (everything has a ‘2’ in it) and contains no refined sugar.
Ingredients:
- 2 cups buttermilk
- 2 eggs, separated
- 2 Tbsp. honey
- 2 Tbsp. melted butter
- 2 cups freshly ground spelt flour
- 2 tsp. baking soda
- 1/2 tsp salt
Directions:
1. Grind spelt kernels into flour. Set aside
2. Blend buttermilk, egg yolks, honey, and melted butter in a large bowl. Add dry ingredients.
3. In a small bowl, beat egg whites until stiff. Fold into batter. Batter should resemble mixture shown above.
4. Fry pancakes on a lightly grease griddle until golden brown, turning once.
5. Serve with maple syrup, butter, fruit, honey, whip cream – you name it!
